breakfast of the dayyy: toasted whole grain pita with roasted garlic spread, scrambled eggs, zucchini, red pepepers, avocado, cilantro and provolone cheese!
also had coconut yogurt with pineapple and strawberries on the side! xxx
lunch as a whole! also challenged my OCD with always having to have something red with every meal haha.
Lunch: Herb crusted grilled chicken, roasted asparagus and cauliflower, bacon leek asaigo smashed potatoes!
balsamic roasted tomato basil chicken with parmesan for lunch! served with lemon garlic roasted potatoes and broccoli :)
breakfast: pumpkin french toast with cranberry compote and cinnamon sugar toasted walnut topping…..OMG SO DELICIOUS!

this is just a close up of my lunch from today, it was so interesting and I went out on a limb trying to create a curry because I used to hate currys and I didnt even have the proper ingredients to make it! it was spicy, sweet, savory, and comforting all at the same time. the chicken was so tender and the leeks provided such a delicious flavor to the whole dish and the pureed butternut squash totally made the sauce. the wild rice on the bottom served as a crunch and it was all just so incredible! try new things and new flavors everyday, experiment with new things and you never know how delicious it could be! :D
