Healthy vegan pumpkin pie! Made the crust out of almond meal, toasted almonds, and honey with a little but of whole wheat graham cracker crumbs and made a silky pumpkin filling with tofu, pumpkin purée and fresh spices with a toasted walnut brown sugar topping! 😍
amazing new lunch! parmesan broccoli ricotta fritters with roasted tomato slices! heavenly, crunchy, fresh, delicious!
breakfast: toasted whole wheat pita with carmelized cocoa dusted banana and fresh strawberries and honey!
lunch: walnut parmesan rosemary crusted chicken with sauteed mushroom dijon sauce ontop roasted brussel sprouts and roasted sweet potatoes!
greek breakfast egg tacos: corn tortillas with roasted olive oil tomatoes, roasted black garlic, feta cheese, pickled red onion and fresh herbs! also had a bowl of yogurt on the side :) such a great switch up from my normal sweet breakfasts! Great start to the week :) xxx

Baked ginger vanilla honey oatmeal inside an apple with roasted cranberry compote and toasted pumpkin spice walnuts with a side of gingered greek yogurt!
woke up super early this morning to go to a job interview and run some errands and had an omelette toast before I left and came back starving yet it is not time for lunch! I listened to my hunger cues and had myself a mid morning snack :)
Snack: Sweet potato with roasted cranberries, almond butter cinnamon and a bowl of gingered yogurt! yumm :) no regrets here!
