Chicken Quesadilla and Sweet Potato fries with avocado cream
- Sautee green bell peppers, onions, and jalepenos in a skillet with chopped garlic until browned
- Soak a can of black beans in water for 20 minutes
- Microwave sweet potato in water for 3 minutes to lightly soften
- Cut up sweet potato into wedges, drizzle with olive oil and place in the oven on 350 for 15-20 minutes
- Place a whole wheat tortilla in a lightly greased pan on low to crisp
- Chop chicken into small chunks (mine was already cooked chicken on the bone!)
- Shred extra sharp white cheddar cheese on the tortilla and than add a small layer of peppers, onions, and jalepenos (I added long hots too! I love spice) than add chunks of chicken and a handful of beans and shred cheese on top than fold tortilla over and let crisp (may need to add a bit more oil when flipping to the other side)
- Take about 2-3 tbsp of avocado and mash into 1-2 tbsp of yogurt, you can add some chopped cilantro to this if youd like
- By the time your tortilla is done cooking check on the sweet potato fries and they should be nice and golden brown, there you have the best meal of your life, enjoy! :) TIP: try the avocado cream with the sweet potato fries, youll be in heaven!
